Steve's Favorite Pineapple-Up-Side-Down Cake





Last night my Husband was wanting an up-side-down cake, his favorite. Through 43 years of marriage I've had a lot of practice to perfect a recipe. I know pineapple is one of those fruits you love or hate, but if you or you have a pineapple lover in the family try my recipe.

This cake is soooo good.
I don't know why but the white cake mix is used in the recipe is so much better than a yellow, but if you have a yellow, don't hesitate to try it, but I promise the next time you make it you'll want to see for yourself if the white is better. I'm going to do a little advertising for Aldi here. If you have an Aldi near you, you already know they're cake mixes are the best and a lot cheaper.
The country apple pie fillingDuncan Hines Comstockยฎ Country Appleis sometimes hard to find, but during the Thanksgiving season it is everywhere, so I always buy 4-5 cans as this my husband's favorite cake.


To make the light caramel sauce I mix 1/2 cup Kraft Caramel Ice Cream Sauce with 3 Tbs. light whipping cream

Almost Healthy Red Velvet Muffies

We'll be heading home for Christmas...have not done that in over 37 years, when our children were very small. Wanted to leave you one last post from my kitchen to yours....Merry Christmas !

I said almost, because there's 1/3 cup of mini chocolate chips and a cake mix used in this recipe.
They're made with pumpkin, apple sauce and a cake mix !



I didn't mention it, but take the muffies off the cookie sheet immediately and cool on a rack. I dusted mine with powdered sugar











The bouquet of flowers in the picture are an arrangement I made for my parent's grave. I'ts important to me that they are remembered for the Holidays. I use a regular tin can, fill it with plaster of Paris, then add my artificial flowers I've purchased. The regular size tin can exactly fits the vases on most headstones.

* ***You've probably notice I steam almost all of my vegetables. I steam because it not just a healthier way to cook vegetables but it's also very handy and can save a lot of time.If you don't have a steamer, get one....you won't be sorry and you may never boil a vegetable again. I steam potatoes, broccoli, carrots, Sweet Potatoes, cauliflower, fresh green beans and everything for a week then store the veggies in the frig in  storage bags. As I need them I can heat them in the microwave, roast or fry. Saves so much time and we eat healthier.

I've used this cook book so much it's almost wore out....
Volunteers and employees gave their recipes to compose what's been my favorite "go-to" cook book.
I've made this recipe for years, so imagine my delight when I got the cook book out to get this recipe for you it came from a very dear friend, Donna Bridges.
This pie is so good I suspect this is the original Cheese Cake Factory pumpkin cheese cake
My Son always insists we have regular pumpkin pie too.........so I buy him one !

Last August I had been married 43 years and for just about all those 43 years, I've hosted and prepared Thanksgiving dinner. I'll be posting my family's favorite dishes that make our Thanksgiving, Thanksgiving.
If you've ever reached into your memories you know that your favorite family gatherings were centered around a meal....how good the food was and how much you enjoyed it.
My recipes are simple and through the years I learned how to put together a feast with as little work as possible. Preparing as many as 10 dishes can be overwhelming and time consuming. I hope you find one of my recipes that become one of your traditional dishes.


If your not making this for a crowd just cut the recipe in half. I use this recipe  if  I'm serving 15-25 guests AND we love left-overs !
I don't do that bird-stuffing thing.....but, if you do, please cook your dressing ingredients first.
I don't always use Stove Top stuffing mix, but I do always used Jimmy's SAGE sausage for my dressing.

Popcorn Ball Bags

When my Granddaughter Morgan, was little we had this wonderful neighbor Dorthy and at Halloween time Dorthy always made Morgan and Courtney, my other Granddaughter from another family,popcorn balls.
This morning when I got up, I was thinking the most fond thoughts of Dorthy and her really good popcorn balls which inspired me to create this design .It's no secret I love making pockets to glue on these little brown paper lunch sacks. 
If your one of those special people that make popcorn balls for the children at Halloween ....these are for you !
 I printed mine on cream card stock.

Here's the orange shoestring I warped around the folded bag and stapled. I printed it out of plain white paper. 
I don't have Dorthy's recipe and something tells me there probably wasn't one written. I suspect Dorthy had made many many popcorn balls from her memory and experience.....love ya Dorthy
