Last night my Husband was wanting an up-side-down cake, his favorite. Through 43 years of marriage I've had a lot of practice to perfect a recipe. I know pineapple is one of those fruits you love or hate, but if you or you have a pineapple lover in the family try my recipe.

Almost Healthy Red Velvet Muffies

We'll be heading home for Christmas...have not done that in over 37 years, when our children were very small. Wanted to leave you one last post from my kitchen to yours....Merry Christmas !

I said almost, because there's 1/3 cup of mini chocolate chips and a cake mix used in this recipe.
They're made with pumpkin, apple sauce and a cake mix !



I didn't mention it, but take the muffies off the cookie sheet immediately and cool on a rack. I dusted mine with powdered sugar











The bouquet of flowers in the picture are an arrangement I made for my parent's grave. I'ts important to me that they are remembered for the Holidays. I use a regular tin can, fill it with plaster of Paris, then add my artificial flowers I've purchased. The regular size tin can exactly fits the vases on most headstones.

glenda's Fat-Free French Toast

You owe it to yourself and your family to try this....................



I just had a pinner comment that the eggs and heavy whipping cream didn't make this no-fat and she's right. There are 4 Tbs. of heavy whipping cream in this recipe. 180 fat calories. 13.11 fat calories in the eggs.  I should have called it  not-fried french toast, but it's an alternative to frying french toast.I have a pancreas condition so I make mine with white bread, egg substitute , no eggs, no cream and I use sugar-free syrup. So, to be honest with you all, I change the title to Low-fat.
I cook two ways....one for me and one for my family....I don't want to force my suffering on them.

glenda's No-Bake Strawberry Cake







Several years ago I was walking past the bakery in my grocery store. I had an idea for a strawberry cake, but sure didn’t want to use the oven as it was summer & my kitchen gets  so hot when the oven’s on, so I decided to see if the lady behind the counter would sell me a plain sheet cake with no icing. 
It took some begging, but she did. I talked her into selling me a quarter sheet cake plain, no icing.
 This is a really good way to buy cakes, they are frozen and very fresh
.
My recipe experiment is delicious and I hope you try this and make up your own recipes ,using the sheet cakes from the bakery.

Just a helpful hint.......if I'm taking this to a gathering or to someone I always use these aluminum foil pans with the clear lid. They're inexpensive and there's no cake plate to worry about

Chocolate Cherry Muffies



I created this recipe and used it at Christmas time, but ran across the pic yesterday and decided I better get the recipe written before I forget it.....that happens to me often when I just make up or make over a recipe.


I should probably, if  you don't already know what a muffy pan is. It's created in a special Muffy Pan AKA Muffin Top Pan. The design was to create a flat cake that looks like the top of a muffin. A friend introduced me to it a few years ago. She gave me this detectable recipe using chocotlate cake mix, pumpkin, applesauce. If I don't get to it this morning, I will add the recipe to this post soon.

* I was doing some sweets with white chocolate candy bark and drizzled them with the left over bark.

Healthy & Easy 3 Ingredient Chocolate Chunk Cookies


I have a congenital pancreas condition. The foods I can eat are  limited.
Finding a snack can be a real challange, but these cookies taste really good and don't make me sick.

Ingredients
1 pkg. Betty Crocker Double Chocolate Chunk Cookie Mix
1 15 oz. can of pumpkin
1  4oz. snak size unsweetened apple sauce

In a large bowl, mix the pumpkin, cookie mix and apple sauce.
Using a cookie sheet lined with Reynolds non-stck foil, drop teaspoon size amounts of the cookie mixture onto your cookie sheet. Bake at 350 10-15 minutes, or until firm to the touch.

* these are so good and while the chocolate chunks can be a problem for me the benefits of the pumpkin and applesauce far out weigh the small amount of chocolate.
